做(zuò )法:洗(xǐ )净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和(hé )薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜,热锅(guō ),用姜块在(zài )锅上擦一遍,放两勺油,待油(yóu )六成热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和(hé )其他(tā )材料(liào ),武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。 -
