做法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏米。用清水把陈皮(pí )泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调(diào )味即可品尝。 -
