做(zuò )法:春笋(sǔn )切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。 -
